  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 4 cups vegetable broth
  • 1/2 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3-4 minutes until softened.
  2. Stir in minced garlic, smoked paprika, and chili powder. Cook for 1 minute until fragrant.
  3. Add corn kernels and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Use an immersion blender to partially puree the soup, leaving some corn kernels whole for texture.
  5. Stir in sour cream and season with salt and black pepper to taste. Simmer for 2-3 more minutes.
  6. Ladle soup into bowls and top with crumbled cotija cheese, chopped cilantro, and a squeeze of lime. Serve hot.
