- 0.25 cup granulated sugar
- 0.25 cup cocoa powder
- 1 large egg, beaten
- 1.75 cups graham cracker crumbs
- 1 cup shredded sweetened coconut
- 0.5 cup chopped walnuts (optional)
- 0.5 cup unsalted butter (for filling)
- 2 tablespoons vanilla custard powder
- 2 tablespoons heavy cream
- 2 cups powdered sugar
- 4 ounces semi-sweet chocolate
- 2 tablespoons unsalted butter (for topping)
Instructions
- Melt 0.5 cup butter, 0.25 cup sugar, and 0.25 cup cocoa powder in a saucepan over low heat. Stir constantly until melted.
- Whisk in the beaten egg and cook until the mixture thickens. Remove from heat.
- Stir in graham cracker crumbs, shredded coconut, and chopped walnuts.
- Press the base mixture into a parchment-lined 8×8 inch pan. Chill to set.
- In a bowl, beat together 0.5 cup butter, custard powder, heavy cream, and powdered sugar until fluffy.
- Spread the custard filling evenly over the chilled base and return to the refrigerator.
- Melt semi-sweet chocolate with 2 tablespoons butter until smooth. Let cool slightly.
- Pour chocolate topping over custard layer and spread evenly. Chill until fully set.
- Use a hot knife to slice cleanly through the bars. Serve chilled or at room temperature.
