- 1 pound Cajun chicken sausage, sliced
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

- 1 red bell pepper, chopped

- 1 cup long-grain rice
- 2 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 tablespoons Cajun seasoning
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet or Dutch oven, heat a drizzle of olive oil over medium heat.
- Add the sliced Cajun chicken sausage and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same pan, add the chopped onion, red and green bell peppers. Sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the bite-sized chicken pieces, sprinkle with salt, and pepper, and cook until no longer pink, about 5-7 minutes.
- Once the chicken is cooked, stir in the uncooked rice until it’s coated with the flavors from the pan.
- Pour in the chicken broth and diced tomatoes. Add the Cajun seasoning, paprika, and dried thyme. Stir well to combine.
- Bring the mixture to a boil, then reduce heat to low. Cover the skillet and let it simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
- Remove the lid, fluff the rice with a fork, and fold in the cooked sausage. Let it sit for an additional 5 minutes off heat.
- Garnish with freshly chopped parsley before serving.
