  • 1 pound Cajun chicken sausage, sliced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet or Dutch oven, heat a drizzle of olive oil over medium heat.
  2. Add the sliced Cajun chicken sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  3. In the same pan, add the chopped onion, red and green bell peppers. Sauté for about 5 minutes until softened.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the bite-sized chicken pieces, sprinkle with salt, and pepper, and cook until no longer pink, about 5-7 minutes.
  6. Once the chicken is cooked, stir in the uncooked rice until it’s coated with the flavors from the pan.
  7. Pour in the chicken broth and diced tomatoes. Add the Cajun seasoning, paprika, and dried thyme. Stir well to combine.
  8. Bring the mixture to a boil, then reduce heat to low. Cover the skillet and let it simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  9. Remove the lid, fluff the rice with a fork, and fold in the cooked sausage. Let it sit for an additional 5 minutes off heat.
  10. Garnish with freshly chopped parsley before serving.
