Description
This One Pot French Onion Pasta recipe is a comforting and flavorful dish inspired by classic French onion soup. It’s made entirely in one pot, making cleanup a breeze. Perfect for a cozy weeknight dinner, it combines deeply caramelized onions, savory broth, and melted cheese with tender pasta.
Ingredients
Scale
- 2 tablespoons unsalted butter
- 2 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces uncooked penne pasta
- 3 cups low-sodium vegetable broth
- 1 cup water
- 1 cup shredded Gruyère cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Melt the butter in a large pot over medium heat. Add the sliced onions and cook, stirring occasionally, until deeply caramelized and golden brown, about 20-25 minutes.
- Add the minced garlic, dried thyme, salt, and black pepper. Cook for 1-2 minutes until fragrant.
- Stir in the uncooked pasta, vegetable broth, and water. Bring to a boil, then reduce heat to a simmer. Cook uncovered, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed, about 10-12 minutes.
- Remove the pot from heat. Stir in the shredded Gruyère and grated Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh chopped parsley.
Notes
- For a richer flavor, you can use beef broth instead of vegetable broth.
- If you prefer a creamier sauce, stir in a splash of heavy cream at the end with the cheese.
- Feel free to use other pasta shapes like fusilli or rotini.
- This dish reheats best on the stove with a splash of broth or water.
