  • 8 ounces uncooked penne pasta
  • 3 cups low-sodium vegetable broth
  • 1 cup water
  • 1 cup shredded Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Melt the butter in a large pot over medium heat. Add the sliced onions and cook, stirring occasionally, until deeply caramelized and golden brown, about 20-25 minutes.
  2. Add the minced garlic, dried thyme, salt, and black pepper. Cook for 1-2 minutes until fragrant.
  3. Stir in the uncooked pasta, vegetable broth, and water. Bring to a boil, then reduce heat to a simmer. Cook uncovered, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed, about 10-12 minutes.
  4. Remove the pot from heat. Stir in the shredded Gruyère and grated Parmesan cheese until melted and creamy.
  5. Serve hot, garnished with fresh chopped parsley.
