Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Pound the chicken breasts to even thickness. Season both sides with salt and black pepper.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of Parmesan cheese, breadcrumbs, garlic powder, and Italian herbs.
- Dredge each chicken breast in flour, dip in egg, then coat thoroughly with the Parmesan-breadcrumb mixture.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until golden.
- Transfer chicken to the prepared baking sheet and bake for 15 minutes or until cooked through and crispy. Serve hot.
