Ingredients

  • 8 ounces pasta (spaghetti, fettuccine, or your choice)
  • 2 large onions, thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • ½ cup grated Parmesan cheese (or more, to taste)
  • Fresh parsley, chopped (for garnish)
  • Crushed red pepper flakes (optional, for a spicy kick)
  • ½ teaspoon minced garlic (optional)

Instructions

  1. Begin by boiling water in a large pot. Add a generous pinch of salt and cook the pasta according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.
  2. In a large skillet, heat olive oil and butter over medium heat. Add the sliced onions, stirring gently to coat. Sprinkle with a pinch of salt.
  3. Reduce the heat to low and cook the onions, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. If they begin to stick or burn, add a splash of water to the pan.
  4. If you like garlic, add minced garlic to the onions in the last 2-3 minutes of cooking, stirring until fragrant.
  5. Once the onions are caramelized, add the cooked pasta to the skillet. Toss gently to combine. If the pasta seems dry, add a bit of the reserved pasta water until desired consistency is reached.
  6. Sprinkle with freshly ground black pepper and adjust seasoning with salt as needed.
  7. Remove the skillet from heat, then stir in the grated Parmesan cheese until well blended.
  8. Serve immediately, garnished with chopped parsley and, if desired, crushed red pepper flakes for added heat.
