- 8 ounces pasta (spaghetti, fettuccine, or your choice)
- 2 large onions, thinly sliced
- 3 tablespoons olive oil
- 1 tablespoon butter
- Salt, to taste
- Freshly ground black pepper, to taste
- ½ cup grated Parmesan cheese (or more, to taste)
- Fresh parsley, chopped (for garnish)
- Crushed red pepper flakes (optional, for a spicy kick)
- ½ teaspoon minced garlic (optional)
Instructions
- Begin by boiling water in a large pot. Add a generous pinch of salt and cook the pasta according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.
- In a large skillet, heat olive oil and butter over medium heat. Add the sliced onions, stirring gently to coat. Sprinkle with a pinch of salt.
- Reduce the heat to low and cook the onions, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. If they begin to stick or burn, add a splash of water to the pan.
- If you like garlic, add minced garlic to the onions in the last 2-3 minutes of cooking, stirring until fragrant.
- Once the onions are caramelized, add the cooked pasta to the skillet. Toss gently to combine. If the pasta seems dry, add a bit of the reserved pasta water until desired consistency is reached.
- Sprinkle with freshly ground black pepper and adjust seasoning with salt as needed.
- Remove the skillet from heat, then stir in the grated Parmesan cheese until well blended.
- Serve immediately, garnished with chopped parsley and, if desired, crushed red pepper flakes for added heat.
