Description

These Peach Cobbler Cheesecake Bars combine the creamy texture of cheesecake with the sweet flavor of peaches and a crunchy crumble topping, creating a delightful dessert perfect for any occasion.

Ingredients

  • For the crust: 1 cup graham cracker crumbs, 1/4 cup granulated sugar, 1/2 cup unsalted butter, melted
  • For the cheesecake filling: 16 oz cream cheese, softened, 1 cup granulated sugar, 1 teaspoon vanilla extract, 3 large eggs, 1 cup sour cream
  • For the peach topping: 3 cups fresh peaches, peeled, pitted, and sliced (or canned peaches, drained), 1/4 cup granulated sugar, 1 tablespoon lemon juice
  • For the crumble topping: 1 cup all-purpose flour, 1/2 cup brown sugar, packed, 1/2 cup rolled oats, 1 teaspoon cinnamon, 1/2 cup unsalted butter, softened

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Mix graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the baking dish for the crust.
  3. Beat softened cream cheese and granulated sugar until smooth. Add vanilla and mix.
  4. Add eggs one at a time, mixing until just combined after each. Fold in sour cream until smooth.
  5. Pour cheesecake filling over the crust.
  6. Toss sliced peaches with granulated sugar and lemon juice. Distribute evenly over the cheesecake layer.
  7. For the crumble topping, combine flour, brown sugar, rolled oats, and cinnamon. Cut in softened butter until coarse crumbs form.
  8. Sprinkle crumble mixture over the peach topping.
  9. Bake for 45-50 minutes, until edges are set and the center has a slight jiggle.
  10. Cool at room temperature for one hour. Cover and refrigerate for at least 4 hours before cutting into bars.

Notes

  • Ensure cream cheese is at room temperature for a smooth filling.
  • Canned peaches can be used if fresh are unavailable; drain them well.
  • Store bars in an airtight container in the refrigerator for up to 5 days.
  • For a gluten-free version, substitute graham cracker crumbs with gluten-free crumbs or almond flour.
  • A pinch of nutmeg or a splash of almond extract can be added to the cheesecake filling for extra flavor.
  • Swap peaches for other fruits like cherries, blueberries, or mixed berries for variations.
