- 2 large eggs
- 1/2 cup oil
- 3/4 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a small bowl, combine creamy peanut butter, powdered sugar, and vanilla extract. Mix until smooth, then roll into 1-inch balls and freeze while prepping the batter.
- In a large mixing bowl, stir together brownie mix, eggs, and oil until fully combined and smooth.
- Preheat oven to 350°F. Line a muffin tin with paper liners or spray with nonstick spray.
- Spoon a tablespoon of brownie batter into each muffin cup. Place a peanut butter ball in the center, then top with more batter to cover.
- Bake for 18–20 minutes or until tops are set and slightly crackly.
- Let cool in the pan for 10 minutes, then transfer to a wire rack.
- Serve warm for a gooey center or let cool completely to store.
