Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract, mixing until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Fold in semi-sweet chocolate chips.
- Scoop out a portion of dough, flatten it, place a peanut butter cup in the center, and wrap the dough around it to enclose.
- Arrange the stuffed cookie dough balls on the prepared baking sheet, spaced 2 inches apart.
- Bake for 12-15 minutes, or until edges are golden brown and centers are set but soft.
- Cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
