Description

Peanut Butter Cup Stuffed Brookies are a delightful dessert combining chocolate chip cookie and brownie flavors with a gooey peanut butter cup center. They are easy to make and perfect for sharing.


Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour

  • 2 cups semi-sweet chocolate chips
  • 12 peanut butter cups (mini or regular size)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Fold in semi-sweet chocolate chips.
  6. Scoop out a portion of dough, flatten it, place a peanut butter cup in the center, and wrap the dough around it to enclose.
  7. Arrange the stuffed cookie dough balls on the prepared baking sheet, spaced 2 inches apart.
  8. Bake for 12-15 minutes, or until edges are golden brown and centers are set but soft.
  9. Cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
