Ingredients

  • 1 pound Portuguese sausage (or chorizo), sliced
  • 1 medium onion, diced

  • 2 celery stalks, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) white beans, drained and rinsed
  • 6 cups chicken or vegetable broth
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups chopped kale or spinach
  • 2 bay leaves
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced Portuguese sausage and cook until browned, about 5-7 minutes.
  3. Add diced onion, garlic, carrots, and celery; sauté for another 5-7 minutes until vegetables soften.
  4. Pour in chicken or vegetable broth and diced tomatoes, bringing the mixture to a boil.
  5. Add kidney beans, white beans, thyme, smoked paprika, bay leaves, salt, and pepper.
  6. Reduce heat to low and simmer for 30-40 minutes to allow flavors to meld.
  7. Stir in chopped kale or spinach and cook for 5-10 minutes until wilted.
  8. Taste and adjust seasoning, adding more salt and pepper as needed.
