Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ginger
  • ¼ teaspoon ground nutmeg
  • 2 eggs
  • 1 cup canned pumpkin puree
  • ½ cup white granulated sugar
  • ½ cup light brown sugar (packed)
  • ½ cup vegetable oil
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F. Grease or line your mini muffin tin with paper liners.
  2. In a large mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. Stir until well combined.
  3. In another bowl, whisk together eggs, pumpkin puree, white sugar, brown sugar, and vegetable oil until just combined.
  4. Pour the wet mixture into the dry ingredients bowl. Gently stir until just combined; do not overmix.
  5. Carefully fold in the chocolate chips using a rubber spatula until evenly distributed.
  6. Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
  7. Bake for 16 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and allow to cool in the pan for about 3 minutes before transferring to a wire rack to cool completely.
