Description

These Pumpkin Peanut Butter Balls are a nutritious, no-bake snack combining wholesome ingredients like oat flour, pumpkin puree, and peanut butter. Naturally sweetened with honey and flavored with pumpkin pie spice, they are perfect for an energy boost or a healthy treat during the fall season.


Ingredients

  • 1 cup oat flour
  • ½ cup oats
  • 2 Tbsp chia or flax seeds
  • ¼ tsp sea salt
  • ½ tsp pumpkin pie spice
  • ¼ cup mini chocolate chips (optional)
  • 3 Tbsp honey (up to 4 Tbsp, adjust to taste)
  • ½ cup peanut butter
  • ½ cup pumpkin puree
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl or food processor, mix the oat flour, oats, chia or flax seeds, sea salt, pumpkin pie spice, honey, peanut butter, pumpkin puree, and vanilla extract until fully combined.
  2. If using a food processor, process the mixture until smooth and evenly blended. If mixing by hand, stir thoroughly until uniform.
  3. Fold in the mini chocolate chips after blending.
  4. Cover the mixture and refrigerate for 15 to 20 minutes to firm up the batter.
  5. Once chilled, scoop small portions and roll them into bite-sized balls using your hands.
