- 6 medjool dates (pits removed)
- ½ teaspoon sea salt
- 4 cups fresh blueberries (plus extra for garnish, optional)
- 2 bananas
- 2 tablespoons maple syrup
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- ½ teaspoon sea salt
Instructions
- Place the walnuts, dates, and ½ teaspoon sea salt into a food processor fitted with an s-blade. Process until the mixture resembles coarse crumbs and begins to stick together. Press the mixture evenly into a 9-inch shallow pie plate or tart pan to form the crust. Place it in the refrigerator to chill while you prepare the filling.
- In a high-speed blender or food processor fitted with an s-blade, combine the fresh blueberries, bananas, maple syrup, lemon juice, vanilla extract, and ½ teaspoon sea salt. Blend until the mixture is completely smooth.
- Pour the smooth blueberry filling over the chilled nut crust, spreading evenly. Refrigerate the pie for several hours or preferably overnight to allow the filling to set and flavors to meld.
- Before serving, optionally garnish the pie with additional fresh blueberries. Slice and enjoy this refreshing raw vegan dessert.
