Description

These Roasted Sweet Potato Rounds with Honey & Feta are a deliciously spiced side or appetizer featuring tender, golden sweet potato slices roasted to perfection and drizzled with honey for a touch of sweetness.


Ingredients

  • 3 large sweet potatoes
  • 3 tablespoons olive oil
  • ½ teaspoon cinnamon
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon regular or hot honey
  • Additional honey, for serving
  • ⅓ cup crumbled feta cheese
  • Fresh chives or parsley, chopped

Instructions

  1. Set your oven to 425°F (220°C).
  2. Thoroughly wash and dry the sweet potatoes. Slice them into ⅓-inch thick rounds.
  3. Drizzle olive oil onto a large rimmed sheet tray, then add the sweet potato rounds. Turn them gently to coat all sides evenly in the oil.
  4. Sprinkle spices and salt over the potatoes. Drizzle the honey on top and turn the potatoes again to coat.
  5. Place the trays in the preheated oven and bake for 20 minutes. Flip each round and bake for an additional 20-25 minutes until golden and crispy.
  6. Move the sweet potato rounds to a serving platter. Add a pinch more salt.
  7. Drizzle more honey over the warm potatoes. Crumble feta on top and sprinkle with chives or parsley.
  8. Enjoy while warm.

  • Use two trays if needed to prevent overcrowding.
