Ingredients

  • 1 pound large shrimp, peeled and deveined
  • ½ cup cornstarch
  • 2 tablespoons all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili flakes (adjust to taste)
  • Oil for frying
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 green onions, chopped
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving

Instructions

  1. Begin by rinsing the shrimp under cold water and patting them dry with paper towels.
  2. In a bowl, combine the cornstarch, flour, baking powder, salt, black pepper, garlic powder, and chili flakes. Mix well to create a dry batter.
  3. Toss the shrimp in the dry batter until they are evenly coated. Shake off any excess batter.
  4. In a large skillet or wok, heat oil over medium-high heat until hot but not smoking.
  5. Carefully add the coated shrimp in batches to the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side. Remove shrimp and let them drain on paper towels.
  6. In the same pan, remove excess oil, leaving a tablespoon. Add minced garlic and ginger and sauté for 30 seconds until fragrant.
  7. Return the fried shrimp to the pan, sprinkle with more salt and pepper to taste, and toss to combine with garlic and ginger.
  8. Stir in the chopped green onions and toss for an additional minute to warm through.
  9. Remove from heat and garnish with fresh cilantro, if using.
  10. Transfer the Salt and Pepper Shrimp to a serving plate and serve immediately with lime wedges on the side.
