- 1 pound large shrimp, peeled and deveined
- ½ cup cornstarch
- 2 tablespoons all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon chili flakes (adjust to taste)
- Oil for frying
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 green onions, chopped
- Fresh cilantro for garnish (optional)
- Lime wedges for serving
Instructions
- Begin by rinsing the shrimp under cold water and patting them dry with paper towels.
- In a bowl, combine the cornstarch, flour, baking powder, salt, black pepper, garlic powder, and chili flakes. Mix well to create a dry batter.
- Toss the shrimp in the dry batter until they are evenly coated. Shake off any excess batter.
- In a large skillet or wok, heat oil over medium-high heat until hot but not smoking.
- Carefully add the coated shrimp in batches to the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side. Remove shrimp and let them drain on paper towels.
- In the same pan, remove excess oil, leaving a tablespoon. Add minced garlic and ginger and sauté for 30 seconds until fragrant.
- Return the fried shrimp to the pan, sprinkle with more salt and pepper to taste, and toss to combine with garlic and ginger.
- Stir in the chopped green onions and toss for an additional minute to warm through.
- Remove from heat and garnish with fresh cilantro, if using.
- Transfer the Salt and Pepper Shrimp to a serving plate and serve immediately with lime wedges on the side.
