Description

Salted Caramel Pumpkin Pie Bars: An Amazing Ultimate Recipe

Ingredients

Scale
  • For the Crust:
  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ⅓ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • For the Filling:
  • 1 can (15 ounces) pure pumpkin puree
  • 1 cup sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • For the Salted Caramel Topping:
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cut into pieces
  • ½ cup heavy cream
  • 1 teaspoon sea salt (plus more for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Make the Crust: In a bowl, cream together the softened butter and granulated sugar. Add vanilla extract and salt, then gradually mix in the flour until combined.
  3. Press the Crust: Spread the crust mixture evenly into the bottom of the prepared baking dish. Use your fingers or a spatula to press it down firmly.
  4. Bake the Crust: Place the crust in the preheated oven and bake for 15 minutes, or until lightly golden. Remove and set aside to cool.
  5. Prepare the Filling: In a large mixing bowl, combine the pumpkin puree, sweetened condensed milk, eggs, cinnamon, nutmeg, ginger, cloves, and salt. Whisk until smooth and well combined.
  6. Pour the Filling: Pour the pumpkin filling over the cooled crust, spreading it evenly.
  7. Bake the Filling: Return the dish to the oven and bake for another 25-30 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.
  8. Make the Salted Caramel: While the bars are baking, prepare the salted caramel. In a saucepan over medium heat, melt the sugar until it turns a golden color, stirring constantly.
  9. Add Butter and Cream: Once the sugar is melted, carefully add the butter and cream, stirring until combined. Remove from heat and stir in the sea salt.
  10. Cool and Assemble: Once the pumpkin bars are done, let them cool completely. Drizzle the salted caramel over the top and sprinkle with additional sea salt if desired.
  11. Slice and Serve: Once cooled, slice the bars into squares and serve!
