Description

A comforting and flavorful Satay Beef Noodle Soup recipe featuring tender beef, silky noodles, and a rich, nutty satay sauce. This easy-to-make dish is perfect for a satisfying meal, especially on cooler days.

Ingredients

Scale
  • 300g beef sirloin, thinly sliced
  • 200g rice noodles
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 3 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon chili paste (adjust to taste)
  • 1 tablespoon lime juice
  • Fresh cilantro leaves (for garnish)
  • Sliced green onions (for garnish)
  • Fresh beansprouts (optional)

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the sliced onion, garlic, and ginger. Sauté for about 2-3 minutes until fragrant.
  3. Increase the heat and add the sliced beef to the pot. Cook until browned, about 5 minutes, stirring frequently.
  4. Pour in the beef broth and bring it to a gentle simmer.
  5. In a separate bowl, whisk together the peanut butter, soy sauce, chili paste, and lime juice. Add this mixture to the pot, stirring until well combined.
  6. Add the cooked noodles to the soup, stirring to ensure they are fully coated with the satay mixture and heated through.
  7. Once everything is heated thoroughly, ladle the soup into bowls and garnish with fresh cilantro, sliced green onions, and beansprouts if desired.

Notes

  • Experiment with flavors by adding extra spices or herbs like basil or mint.
  • Adjust the spice level by reducing the chili paste or omitting it.
  • Add fresh vegetables like bell peppers, snap peas, or bok choy for added nutrition.
  • Substitute soy sauce with tamari and use gluten-free noodles for a gluten-free version.
  • For a milder soup suitable for kids, reduce chili paste and add a touch of honey.
