Description

Sausage Egg and Cheese Breakfast Roll-Ups are a delicious and portable breakfast option featuring savory sausage, fluffy scrambled eggs, and melted cheese wrapped in golden crescent dough. Perfect for busy mornings or a weekend brunch.

Ingredients

Scale
  • 4 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 breakfast sausage links
  • 1 cup shredded cheddar cheese
  • 1 can refrigerated crescent roll dough (8 pieces)
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook the sausage links until browned and cooked through. Remove and set aside.
  3. In a bowl, whisk together eggs, milk, salt, and pepper. Melt butter in the same skillet and scramble the eggs until just set.
  4. Unroll the crescent dough and separate into 8 triangles. Place a spoonful of scrambled eggs, a sprinkle of cheese, and half a sausage link on the wide end of each triangle.
  5. Roll up each triangle, enclosing the filling, and place seam-side down on the prepared baking sheet.
  6. Bake for 15-18 minutes or until golden brown. Serve warm.

Notes

  • These roll-ups reheat well.
  • For a spicy kick, add hot sauce to the eggs or use spicy sausage.
  • Consider adding black beans and taco seasoning for a Southwest variation.
  • Leftovers can be stored in an airtight container in the fridge for 2-3 days.
  • These can be frozen for up to a month, reheating best in the oven.
