Description

This easy sausage and peppers recipe is a quick and flavorful weeknight dinner. Juicy Italian sausages are sautéed with colorful bell peppers and onions, creating a hearty and satisfying meal.


Ingredients

  • 4 Italian sausages (mild or hot)
  • 2 tablespoons olive oil
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides, about 7-8 minutes. Remove sausages from the skillet and set aside.
  2. In the same skillet, add the sliced onions and bell peppers. Sauté for 5-6 minutes until they begin to soften.
  3. Add minced garlic, dried oregano, salt, and black pepper. Stir and cook for 1 minute until fragrant.
  4. Slice the browned sausages into 1-inch pieces and return them to the skillet with the vegetables.
  5. Cook everything together for another 8-10 minutes, stirring occasionally, until the sausages are cooked through and the peppers are tender.
  6. Serve hot, on its own or with crusty bread, pasta, or rice.

Notes

  • This dish can be made ahead and tastes even better the next day.
  • For softer peppers, cover the pan for 5 minutes while cooking.
  • Use sausages with some fat for best results, as very lean sausages can dry out.
