This easy sausage and peppers recipe is a quick and flavorful weeknight dinner. Juicy Italian sausages are sautéed with colorful bell peppers and onions, creating a hearty and satisfying meal.

- 4 Italian sausages (mild or hot)
- 2 tablespoons olive oil
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides, about 7-8 minutes. Remove sausages from the skillet and set aside.
- In the same skillet, add the sliced onions and bell peppers. Sauté for 5-6 minutes until they begin to soften.
- Add minced garlic, dried oregano, salt, and black pepper. Stir and cook for 1 minute until fragrant.
- Slice the browned sausages into 1-inch pieces and return them to the skillet with the vegetables.
- Cook everything together for another 8-10 minutes, stirring occasionally, until the sausages are cooked through and the peppers are tender.
- Serve hot, on its own or with crusty bread, pasta, or rice.
Notes
- This dish can be made ahead and tastes even better the next day.
- For softer peppers, cover the pan for 5 minutes while cooking.
- Use sausages with some fat for best results, as very lean sausages can dry out.
