  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 0.25 cup tomato paste
  • 0.5 cup chicken broth
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 0.25 cup grated Parmesan cheese (optional, for serving)
  • Fresh basil or parsley (optional garnish)

Instructions

  1. Place chicken pieces into the bottom of your slow cooker.
  2. Pour diced tomatoes (undrained) over the chicken. Spoon in tomato paste and pour in chicken broth.
  3. Stir in diced onion, minced garlic, dried basil, dried oregano, dried thyme, garlic powder, and red pepper flakes (if using).
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until chicken is cooked through and tender.
  6. Remove chicken from the slow cooker and shred using two forks, or slice into pieces.
  7. Serve the Italian chicken, optionally topped with Parmesan cheese and fresh herbs.
