  • 0.5 cup plain Greek yogurt or light coconut milk
  • Optional garnish: fresh cilantro, lime wedges

Instructions

  1. Place the cut chicken, diced onion, minced garlic, grated ginger, diced potatoes, sliced carrots, chicken broth, yellow curry powder, turmeric, cumin, coriander, cayenne pepper (if using), and salt into your slow cooker insert.
  2. Stir well to combine all ingredients evenly.
  3. Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is cooked through and vegetables are tender.
  4. About 30 minutes before serving, stir in the Greek yogurt or light coconut milk until smooth and creamy.
