Soft Gingerbread Cookies: The Amazing Ultimate Recipe to Explore

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup unsulfured molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for icing)
  • Water (for icing)

Instructions

  1. In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  2. In another bowl, beat the softened butter and granulated sugar together until light and fluffy.
  3. Stir in the molasses, egg, and vanilla extract until fully blended.
  4. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Do not overmix.
  5. Cover the dough and refrigerate for at least one hour, allowing the flavors to meld and making the dough easier to handle.
  6. Preheat your oven to 350°F (175°C) while waiting for the dough to chill.
  7. Roll the chilled dough into 1-inch balls, spacing them about 2 inches apart on parchment-lined baking sheets.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are just set and the centers remain soft.
  9. Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
  10. Mix powdered sugar with a few drops of water to create a smooth icing. Drizzle or pipe over cooled cookies as desired.
