Description

Southern-Style Honey Butter Cornbread Poppers are delightful bite-sized treats that combine the sweetness of honey with the rich flavor of butter.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1/2 cup honey
  • 1/2 cup unsalted butter, melted
  • Extra honey and butter for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a mini muffin pan to prevent sticking.
  2. In a large bowl, whisk together the all-purpose flour, cornmeal, granulated sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the buttermilk, vegetable oil, and eggs until smooth.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.
  5. Gently fold in the melted butter and 1/4 cup of honey, mixing until evenly distributed.
  6. Spoon the batter into the prepared mini muffin pan, filling each cup about 2/3 full.
  7. Place the muffin pan in the preheated oven and bake for 15-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the poppers from the oven and let them cool in the pan for about 5 minutes before transferring to a wire rack.
  9. While the poppers are still warm, drizzle additional melted butter and honey over the tops for added flavor.

Notes

  • For a richer flavor, use brown sugar instead of granulated sugar.
  • These poppers can be served warm or at room temperature.
