- 2 cups fresh spinach
- 1 lb spinach and cheese ravioli, fresh or frozen
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1.5 cups heavy cream
- 2 tbsp olive oil or butter
- 0.75 cup grated Parmesan cheese, freshly grated
Instructions
- Melt olive oil or butter in a large skillet over medium heat.
- Add minced garlic and sliced mushrooms. Sauté until mushrooms are soft and lightly browned.
- Add fresh spinach to the skillet and stir until just wilted.
- Cook ravioli according to package directions. Drain well.
- Pour heavy cream into the skillet with the mushroom and spinach mixture. Bring to a gentle simmer.
- Stir in grated Parmesan cheese, Italian seasoning, salt, and pepper until the cheese is melted and the sauce is creamy. Taste and adjust seasoning.
- Add the drained, cooked ravioli to the skillet and toss to coat evenly with the sauce.
- Serve immediately.
