  • 2 cups jasmine rice

  • 2 tablespoons rice vinegar
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated

Instructions

  1. Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rice and chicken broth or water. Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes, or until the rice is tender and liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
  2. Prepare the Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, and black pepper. Set aside.
  3. Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and sauté until they are browned and cooked through, about 5-7 minutes.
  4. Add Vegetables: While the chicken is cooking, toss in the mixed vegetables. Stir and let them cook for about 3-4 minutes until tender.
  5. Combine Sauce and Chicken: Pour the sauce over the cooked chicken and vegetables in the skillet. Stir well and let it simmer for another 2-3 minutes until the sauce thickens and clings to the chicken.
  6. Finish Cooking the Rice: Fluff the jasmine rice with a fork and drizzle with sesame oil if using. Mix gently to incorporate.
  7. Assemble the Bowls: To serve, place a scoop of jasmine rice at the bottom of each bowl. Top generously with the sticky chicken mixture, ensuring some sauce drizzles over the rice.
