This Strawberry Cheesecake Recipe is a no-bake, creamy and refreshing dessert featuring a biscuit base, fresh strawberry puree, and a luscious blend of hung curd and fresh cream.

- 4 biscuits
- 3 teaspoon melted butter
- 1/2 cup fresh strawberries, packed
- 3 tablespoon sugar (adjust according to sweet/sour taste of strawberries)
- 1/2 cup hung curd
- 1/2 cup fresh cream
- 1/2 tablespoon china grass (agar agar)
- 2 tablespoon water
Instructions
- Hang curd in a cloth for an hour to drain all water and obtain 1/2 cup thick hung curd. Meanwhile, crush the biscuits roughly and then powder them to a semi-fine mixture. Add the melted butter and mix thoroughly until the mixture is moist.
- Spoon the biscuit mixture evenly into serving glasses, pressing firmly with the back of a spoon or fingertips to create a solid base. Refrigerate this layer while preparing the other components.
- Roughly chop fresh strawberries and blend them with sugar until smooth. Optionally, heat this puree in a pan just until it reaches a boil to enhance flavor and dissolve sugar completely. Set aside to cool. Reserve 1/4 cup of this puree for the top layer.
- In a mixing bowl, combine the hung curd and fresh cream, whisking until smooth. Stir in the strawberry puree (except the reserved 1/4 cup) and mix well. Taste and adjust sugar if needed, beating well to dissolve.
- In a small pan, bring 2 tablespoons of water to a boil. Place a heat-resistant small cup containing agar agar into the boiling water, allowing it to dissolve completely until the liquid is clear.
- Add the dissolved agar agar liquid to the strawberry cheese cream mixture and mix thoroughly to ensure even distribution.
- Pour the strawberry cheese cream mixture over the biscuit base in the glasses. Then drizzle the reserved strawberry puree on top as the finishing layer. Chill in the refrigerator for at least 2 hours or until set and firm.
- Once set, serve chilled for a refreshing and creamy strawberry cheesecake dessert experience.
