Strawberry and Cinnamon French Toast Roll-Ups are a delightful treat, perfect for breakfast or brunch.

- 8 slices of white or whole wheat bread
- 1 cup fresh strawberries, sliced
- 1 tablespoon granulated sugar
- 1 teaspoon cinnamon
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 tablespoons butter
- Maple syrup, for serving
- Powdered sugar, for dusting (optional)
Instructions
- In a bowl, mix sliced strawberries with granulated sugar and let them macerate for about 10 minutes.
- Take each slice of bread and flatten it using a rolling pin.
- Combine the macerated strawberries with a pinch of cinnamon.
- In a bowl, whisk together eggs, milk, vanilla extract, and remaining cinnamon.
- Place a heaping tablespoon of strawberry filling on one end of a slice of flattened bread. Roll tightly and tuck the end to seal.
- Heat a non-stick skillet over medium heat and melt the butter.
- Dip each roll-up into the egg mixture and place seam side down in the skillet. Cook for 2-3 minutes on each side until golden brown.
- Continue until all roll-ups are cooked, adding more butter as needed.
- Dust with powdered sugar if desired. Serve warm with maple syrup.
