Description

Strawberry and Cinnamon French Toast Roll-Ups are a delightful treat, perfect for breakfast or brunch.


Ingredients

  • 8 slices of white or whole wheat bread
  • 1 cup fresh strawberries, sliced
  • 1 tablespoon granulated sugar
  • 1 teaspoon cinnamon
  • 3 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • Maple syrup, for serving
  • Powdered sugar, for dusting (optional)

Instructions

  1. In a bowl, mix sliced strawberries with granulated sugar and let them macerate for about 10 minutes.
  2. Take each slice of bread and flatten it using a rolling pin.
  3. Combine the macerated strawberries with a pinch of cinnamon.
  4. In a bowl, whisk together eggs, milk, vanilla extract, and remaining cinnamon.
  5. Place a heaping tablespoon of strawberry filling on one end of a slice of flattened bread. Roll tightly and tuck the end to seal.
  6. Heat a non-stick skillet over medium heat and melt the butter.
  7. Dip each roll-up into the egg mixture and place seam side down in the skillet. Cook for 2-3 minutes on each side until golden brown.
  8. Continue until all roll-ups are cooked, adding more butter as needed.
  9. Dust with powdered sugar if desired. Serve warm with maple syrup.
