  • 2 bay leaves

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients: Start by cutting the beef into chunks and chopping the vegetables.
  2. Sear the Beef: Heat olive oil in a skillet over medium-high heat. Brown the beef chunks on all sides (about 3-5 minutes) for added flavor. This step is optional but highly recommended.
  3. Add Vegetables: Transfer the browned beef to the slow cooker. Add the chopped onion, garlic, carrots, and celery on top.
  4. Mix the Sauce: In a medium bowl, combine the crushed tomatoes, beef broth, red wine (if using), tomato paste, dried herbs, salt, and pepper. Stir well until mixed.
  5. Pour Over Beef: Pour the sauce mixture over the beef and vegetables in the slow cooker. Add bay leaves on top.
  6. Cook: Cover the slow cooker and set it on low for 6-8 hours. If you’re in a hurry, you can set it on high for about 3-4 hours.
  7. Check for Doneness: When cooking is finished, the beef should be tender and easily shredded with a fork. Remove the bay leaves before serving.
