Description

Ingredients

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup chopped Medjool dates
  • 1/2 teaspoon cinnamon
  • 1/3 cup chopped walnuts or pecans (optional)

Instructions

  1. Cream butter and brown sugar together until light and fluffy.
  2. Add egg and vanilla extract, beat until well combined.
  3. In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in chopped dates and nuts if using.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop tablespoon-sized dough balls and space them evenly on the sheet.
  8. Bake for 10-12 minutes until edges are golden and centers are just set.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  10. Serve warm or store in an airtight container.
