Delicious Sweet Hawaiian Crockpot Chicken
Ingredients

- 2 pounds chicken thighs or breasts
- 1 can pineapple chunks with juice (20 oz)
- 1/2 cup soy sauce
- 1/3 cup brown sugar
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 red bell pepper, chopped (optional)
Instructions
- Trim and cut the chicken into bite-sized chunks, then place in the crockpot.
- In a bowl, combine pineapple chunks (with juice), soy sauce, brown sugar, and minced garlic. Mix until sugar dissolves.
- Pour the sauce mixture over the chicken in the crockpot.
- Cook on low for 5–6 hours or high for 3–4 hours until chicken is tender.
- Mix cornstarch with cold water. Add to crockpot 30 minutes before serving. Stir well and leave uncovered to thicken.
- Once thickened, serve over rice or with your favorite sides. Garnish with green onions or sesame seeds if desired.
