Sweet Potato Banana Bread: An Incredible Ultimate Recipe


Ingredients

  • 1 cup mashed sweet potatoes (about 1 medium sweet potato)
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil or melted coconut oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1/2 cup chopped nuts (walnuts or pecans, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Boil or bake the sweet potato until tender. Once cooled, peel and mash.
  3. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  4. In a large bowl, combine the sugars and oil. Mix until well blended.
  5. Stir in the eggs and vanilla extract, mixing until combined.
  6. Add the mashed sweet potatoes and bananas to the mixture. Stir until well incorporated.
  7. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  8. Gradually fold the dry ingredients into the wet ingredients. Mix just until combined, avoiding over-mixing.
  9. If desired, fold in chopped nuts for added texture.
  10. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  11. Place in the preheated oven and bake for 50 minutes to 1 hour or until a toothpick inserted in the center comes out clean.
  12. Remove from the oven and let it cool in the pan for 10-15 minutes. Then transfer to a wire rack to cool completely.
