- 1 cup mashed sweet potatoes (about 1 medium sweet potato)
- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil or melted coconut oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg (optional)
- 1/2 cup chopped nuts (walnuts or pecans, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Boil or bake the sweet potato until tender. Once cooled, peel and mash.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- In a large bowl, combine the sugars and oil. Mix until well blended.
- Stir in the eggs and vanilla extract, mixing until combined.
- Add the mashed sweet potatoes and bananas to the mixture. Stir until well incorporated.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually fold the dry ingredients into the wet ingredients. Mix just until combined, avoiding over-mixing.
- If desired, fold in chopped nuts for added texture.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Place in the preheated oven and bake for 50 minutes to 1 hour or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool in the pan for 10-15 minutes. Then transfer to a wire rack to cool completely.
