  • 2 tablespoons melted butter

  • Freshly ground black pepper, to taste
  • 1 ounce finely grated Parmesan cheese
  • 3/4 cup grated Gruyere cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray an oven-safe shallow baking dish with olive oil.
  2. In a medium bowl, toss the thinly sliced sweet potatoes with melted butter, chopped thyme, kosher salt, and black pepper until evenly coated.
  3. Arrange the seasoned sweet potato slices in an even layer in the prepared dish.
  4. Sprinkle the grated Parmesan and Gruyere cheeses evenly over the top of the sweet potato slices.
  5. Bake for 45-55 minutes, or until the sweet potatoes are fork-tender and the cheese is golden brown and bubbly. If the cheese browns too quickly, loosely tent the dish with aluminum foil.
  6. Let the gratin rest for 5-10 minutes before serving.
