  • 1 boneless pork loin roast (about 3 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the pork loin roast dry with paper towels.
  2. In a small bowl, mix together olive oil, rosemary, thyme, garlic, salt, and black pepper to form a paste.
  3. Rub the herb paste evenly over the entire surface of the pork loin.
  4. Place the pork loin in a roasting pan. Pour the chicken broth into the bottom of the pan.
  5. Roast in the preheated oven for 1 hour and 10 minutes, or until the internal temperature reaches 145°F (63°C). Baste the pork with pan juices halfway through cooking.
