- 1 boneless pork loin roast (about 3 pounds)
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup low-sodium chicken broth
Instructions
- Preheat your oven to 375°F (190°C). Pat the pork loin roast dry with paper towels.
- In a small bowl, mix together olive oil, rosemary, thyme, garlic, salt, and black pepper to form a paste.
- Rub the herb paste evenly over the entire surface of the pork loin.
- Place the pork loin in a roasting pan. Pour the chicken broth into the bottom of the pan.
- Roast in the preheated oven for 1 hour and 10 minutes, or until the internal temperature reaches 145°F (63°C). Baste the pork with pan juices halfway through cooking.
- Remove from the oven and let the pork rest for 10 minutes before slicing and serving.
