Ingredients

  • 2 slices of whole grain or sourdough bread
  • 6 ounces of sliced turkey breast (deli or roasted)
  • 2 tablespoons of pesto (store-bought or homemade)
  • 1 slice of mozzarella cheese (optional)
  • 1 cup of fresh spinach or arugula
  • 1 medium tomato, sliced
  • Olive oil or butter, for grilling or toasting
  • Salt and pepper, to taste

Instructions

  1. Gather all your ingredients on the countertop for easy access.
  2. On one side of each slice of bread, spread a generous amount of pesto. Ensure it covers the entire slice for maximum flavor.
  3. Place the sliced turkey on one of the pesto-spread slices. You can adjust the amount based on your taste.
  4. If using, add the slice of mozzarella cheese on top of the turkey for a creamier texture.
  5. Top the turkey (and cheese) with fresh spinach or arugula for added crunch and nutrients.
  6. Layer the sliced tomatoes on top of the greens, then season with salt and pepper to enhance the flavors.
  7. Place the other pesto-spread slice of bread on top, pesto side down, to close the sandwich.
