Description

A rich and elegant Tuscan Salmon with Parmesan Cream Sauce recipe featuring pan-seared salmon fillets in a creamy garlic Parmesan sauce with sun-dried tomatoes and spinach. This comforting dish is perfect for a weeknight dinner or a special occasion.


Ingredients

  • 4 salmon fillets (about 6 oz each), skinless
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season both sides of the salmon fillets with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the salmon fillets for 4-5 minutes per side until golden and just cooked through. Remove salmon from skillet and set aside.
  3. In the same skillet, melt the butter and add the minced garlic. Sauté for 1 minute until fragrant.
  4. Pour in the heavy cream and stir in the Parmesan cheese. Simmer for 2-3 minutes, stirring constantly, until the sauce thickens.
  5. Add the sun-dried tomatoes, spinach, and Italian seasoning. Cook until the spinach wilts.
  6. Return the salmon fillets to the skillet and spoon sauce over the top. Simmer for an additional 2 minutes.
  7. Garnish with fresh parsley and serve hot.

Notes

  • For a lighter version, Greek yogurt can be used instead of cream, though it may be tangier.
  • If the sauce is too thick, add a splash of milk or water.
  • If the pan is too hot when adding cream, it may split, but whisking usually resolves this.
  • Leftovers can be stored in the fridge for about 2 days and revived with a splash of milk when reheating.
  • This Tuscan salmon recipe is flavorful on its own but pairs well with crusty bread, mashed potatoes, pasta, or roasted asparagus.
