Description

This Tuscan-Style Slow-Cooked Beef Roast recipe brings the heart of Italy to your dining table with its rich flavors and tender, juicy beef. Perfect for a cozy meal or a special occasion, this dish is simple to prepare and a delight to serve.

Ingredients

Scale
  • 3 to 5 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups diced tomatoes (canned or fresh)
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste
  • Fresh rosemary sprigs for garnish (optional)
  • Seasonal vegetables (carrots, potatoes, etc.) for cooking alongside the roast (optional)

Instructions

  1. Pat the beef roast dry with paper towels.
  2. Generously season the roast with salt and pepper on all sides.
  3. In a large skillet over medium-high heat, add olive oil. Sear the roast for about 3-4 minutes on each side until browned.
  4. Remove the roast from the skillet. Add chopped onion and garlic to the skillet and sauté until the onion is translucent, about 3-5 minutes.
  5. In a slow cooker, combine the sautéed onion and garlic with diced tomatoes, beef broth, red wine, tomato paste, Worcestershire sauce, oregano, thyme, and rosemary.
  6. Return the seared roast to the slow cooker, ensuring it is submerged in the liquid. Add seasonal vegetables around the roast if desired.
  7. Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender and easily pulls apart with a fork.
  8. Once cooked, remove the roast and allow it to rest for 10-15 minutes before slicing. Optionally, thicken the sauce by simmering it on the stovetop.

Notes

  • For best flavor, use fresh herbs when possible.
  • Allow the roast to rest after cooking to retain juices.
  • Adjust seasoning to your preference during cooking.
  • Consider using a bone-in chuck roast for added richness.
  • Experiment with different seasonal vegetables.
