- 1 pound loaf rustic bread, cut into 1-inch cubes (about 10 cups of cubes)
- 1 1/2 to 2 cups blueberries, frozen or fresh
- 8 tablespoons sugar, divided
- 1 tablespoon finely grated lemon zest
- 1/8 teaspoon kosher salt
- 5 large eggs
- 2 cups milk (whole or 2 percent)
- 1 cup heavy cream
- 1/2 teaspoon vanilla extract
- 2 tablespoons unsalted butter, diced
Instructions
- Butter a 9 x 13-inch or similar 3-quart baking dish generously to prevent sticking.
- Spread half of the bread cubes evenly in the prepared dish. Scatter 2/3 of the blueberries over the bread, then add the remaining bread cubes and top with the rest of the blueberries.
- In a large bowl, whisk together the eggs, milk, heavy cream, vanilla extract, 6 tablespoons sugar, lemon zest, and kosher salt until fully combined and smooth.
- Pour the custard mixture evenly over the layered bread and blueberries. Gently press down to ensure the bread absorbs the custard.
- Let the casserole soak at least 30 minutes at room temperature or refrigerate overnight.
- Preheat the oven to 350°F (175°C) when ready to bake.
- Sprinkle the remaining 2 tablespoons of sugar over the top and dot with diced butter. Bake for about 45 minutes, or until puffed and golden brown.
- Let cool for about 10 minutes before cutting. Serve with powdered sugar or maple syrup.
- Store leftovers in the refrigerator for up to one week and reheat in the microwave.
