- 1 cup brown sugar
- 1/4 cup granulated sugar (for topping)
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon (plus 1/2 teaspoon for topping)
Instructions
- Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
- Melt the butter in a saucepan or microwave until just melted, then whisk in the brown sugar until smooth.
- Let the mixture cool slightly, then whisk in the egg and vanilla extract.
- In a separate bowl, mix flour, baking powder, salt, and 1 teaspoon cinnamon.
- Fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Pour the batter into the prepared pan and smooth the top.
- Mix the granulated sugar with 1/2 teaspoon cinnamon and sprinkle evenly over the batter.
- Bake for 22–25 minutes, until the edges are set and the center is just firm.
- Let the blondies cool in the pan for 15 minutes before slicing.
