- 8 ounces elbow macaroni
- 2 cups chicken or vegetable broth
- 1 cup whole milk
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon paprika (optional)
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot, combine the elbow macaroni, broth, and milk.
- Bring the mixture to a boil over medium-high heat. Stir occasionally to prevent sticking.
- Once boiling, reduce the heat to medium-low. Cover the pot and simmer for 8-10 minutes, or until the pasta is tender.
- Stir in the butter, garlic powder, onion powder, salt, black pepper, and paprika (if using).
- Gradually add the cheddar and mozzarella cheese, stirring continuously until melted and creamy.
- If the mac and cheese is too thick, add a splash more milk to reach your desired consistency.
- Taste the dish and adjust the seasonings if necessary.
- Remove from heat and let it sit for a minute. Then, serve warm, garnished with fresh parsley if desired.
