Description

Crockpot Sweet Potato Beef Stew is a hearty, flavor-packed dinner that combines tender chunks of beef, naturally sweet potatoes, and aromatic vegetables into a comforting slow cooker masterpiece.

  • 2 pounds beef chuck roast (cut into 1.5-inch cubes)
  • 3 cups sweet potatoes (peeled and cut into large chunks)
  • 1 cup carrots (sliced)
  • 1 cup celery (chopped)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (for cornstarch slurry)
  • 2 tablespoons fresh parsley (chopped, optional for garnish)

Instructions

  1. Chop the sweet potatoes, carrots, celery, onion, and garlic. Cut the beef into cubes and pat dry with paper towels.
  2. Heat a skillet over medium-high heat and sear the beef cubes on all sides for extra flavor. This step is optional but recommended.
  3. Add sweet potatoes, carrots, celery, and onions to the bottom.
  4. Place the beef cubes on top of the vegetables.
  5. Pour in the beef broth, tomato paste, Worcestershire sauce, garlic, smoked paprika, thyme, salt, pepper, and bay leaves.
  6. Cook on Low for 7 to 9 hours, or

  8. Mix cornstarch and cold water to create a slurry.
  9. Stir into the Crockpot during the last 20 to 30 minutes of cooking to thicken the broth.
