- 1 pound ground beef (or turkey)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (16 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 1 cup cooked rice (optional)
- Tortilla chips or crushed tortillas for topping
- Sliced jalapeños (optional)
- Chopped cilantro for garnish (optional)
- Sour cream for serving (optional)
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- In the crockpot, combine the cooked ground beef, black beans, corn, diced tomatoes, taco seasoning, and salsa. Stir well to mix all the ingredients.
- If you’re using cooked rice, stir it into the mixture now for a heartier casserole.
- Sprinkle about one cup of shredded cheddar cheese on top of the mixture in the crockpot.
- Cover the crockpot and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until heated through and flavors melded.
- About 15 minutes before serving, sprinkle the remaining cheese on top. Cover again until melted.
- If desired, serve with crushed tortilla chips, sliced jalapeños, and chopped cilantro on top.
