Description

This Doritos Taco Casserole is your new weeknight dinner hero. It’s a quick, easy, and flavorful meal that combines taco-seasoned ground beef, corn, tomatoes, cheese, and the signature crunch of Doritos. Perfect for busy families and guaranteed to be a crowd-pleaser.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1/2 yellow onion, diced
  • 1 teaspoon minced garlic
  • 1 packet taco seasoning
  • 12 ounce bag frozen corn
  • 14.5 ounce can petite diced tomatoes with green chilies, undrained
  • 1 cup sour cream
  • 2 cups Doritos, finely crushed
  • 1 cup Doritos, loosely crushed
  • 3 cups Mexican blend cheese
  • 1 cup black beans (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Drain off excess grease.
  2. Add diced yellow onion and minced garlic to the skillet with the beef. Cook until onion softens, about 5-7 minutes.
  3. Stir in the taco seasoning and cook for one more minute, stirring constantly.
  4. Add frozen corn, undrained petite diced tomatoes with green chilies, and optional black beans. Stir and bring to a gentle simmer.
  5. Remove skillet from heat. Stir in sour cream and then fold in the 2 cups of finely crushed Doritos.
  6. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  7. Pour the mixture evenly into the prepared baking dish.
  8. Sprinkle the Mexican blend cheese evenly over the top.
  9. Top with the 1 cup of loosely crushed Doritos.
  10. Bake for 20-25 minutes, or until cheese is melted and bubbly and Doritos are golden brown.
  11. Let sit for a few minutes before serving. Garnish optionally with green onions, diced tomatoes, lettuce, avocado, or sour cream.

Notes

  • For finely crushed Doritos, place them in a Ziploc bag and crush with a rolling pin or the bottom of a glass. For the topping, a gentle crush by hand is perfect.
  • This casserole can be assembled a day in advance up to step 8. Refrigerate and bake as usual, adding a slightly longer baking time.
