- 6 tablespoons peanut butter
- 3 tablespoons chopped peanuts
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
- 1 teaspoon sea salt (optional)
Instructions
- Slice each Medjool date open lengthwise and remove the pit, keeping the date intact like a book.
- Fill each date with about a teaspoon of peanut butter.
- Sprinkle chopped peanuts over the peanut butter filling.
- Freeze the stuffed dates for 10–15 minutes to help them firm up.
- Melt dark chocolate with coconut oil in the microwave or double boiler until smooth.
- Dip each date in the chocolate using a fork, let excess drip off, and place on parchment paper.
- Sprinkle with sea salt if using.
- Chill again in the fridge or freezer until the chocolate sets.
