- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 3/4 cup eggnog
- 2 large eggs
- 1/2 teaspoon rum extract
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat the oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
- Mix the graham cracker crumbs with melted butter until evenly moistened. Press into the bottom of the pan to form the crust.
- In a mixing bowl, beat the cream cheese until smooth and creamy.
- Add sugar and beat until well combined and fluffy.
- Pour in the eggnog, eggs, rum extract, and nutmeg. Mix until just blended.
- Pour the cheesecake mixture over the crust and smooth the top with a spatula.
- Bake for 35–40 minutes or until the center is set but still slightly jiggly.
- Let cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- Slice into bars and garnish with whipped cream and nutmeg before serving if desired.
