- 3/4 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 1/4 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 1/2 cups pitted cherries
- 1/4 cup chocolate shavings (optional)
- Extra powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- In a large bowl, beat the eggs and granulated sugar with an electric mixer for 5-6 minutes until thick and pale.
- In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
- Gently fold the dry ingredients into the egg mixture. Add vanilla and mix just until combined.
- Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes until springy to the touch.
- While still hot, invert the cake onto a clean towel dusted with powdered sugar. Peel off parchment and gently roll the cake in the towel. Let cool completely.
- Beat heavy cream with powdered sugar until stiff peaks form. Refrigerate until needed.
- Carefully unroll the cooled cake. Spread the whipped cream evenly over the surface and top with cherries.
- Gently re-roll the cake without the towel. Place seam-side down and refrigerate for at least 1 hour.
- Dust with powdered sugar or cocoa powder and garnish with chocolate shavings before serving.
