Description

These fluffy cinnamon roll pancakes are a delightful breakfast treat. They combine the light texture of pancakes with the warm, gooey flavors of cinnamon rolls, topped with a creamy glaze.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 2 large eggs
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the cinnamon swirl:
  • 1/4 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter, softened
  • For the glaze:
  • 1/2 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Whisk together flour, granulated sugar, baking powder, and salt in a large bowl.
  2. In another bowl, whisk together milk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. In a small bowl, mix brown sugar, ground cinnamon, and softened butter to create the cinnamon swirl mixture. Transfer to a piping bag or a zip-top bag with a small corner cut off.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  6. Pour about 1/4 cup of batter onto the hot skillet for each pancake.
  7. Pipe a swirl of the cinnamon mixture onto the surface of each pancake batter.
  8. Cook until bubbles form on the surface, then gently flip the pancake.
  9. Cook the other side until golden brown.
  10. For the glaze, whisk together powdered sugar and 2 tablespoons of milk until smooth.
  11. Drizzle the glaze over the warm cinnamon roll pancakes before serving.

Notes

  • Do not overmix the pancake batter. Lumps are okay.
  • If the cinnamon swirl mixture becomes too thick, microwave it for a few seconds.
  • Allow pancakes to cool for a minute before glazing for best results.
  • For thicker pancakes, do not press down with the spatula after flipping.
  • If you don’t have a piping bag, a zip-top bag with a corner snipped off works well.
