These fluffy cinnamon roll pancakes are a delightful breakfast treat. They combine the light texture of pancakes with the warm, gooey flavors of cinnamon rolls, topped with a creamy glaze.

- 1 1/2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 2 large eggs
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- For the cinnamon swirl:
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
- 2 tablespoons unsalted butter, softened
- For the glaze:
- 1/2 cup powdered sugar
- 2 tablespoons milk
Instructions
- Whisk together flour, granulated sugar, baking powder, and salt in a large bowl.
- In another bowl, whisk together milk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- In a small bowl, mix brown sugar, ground cinnamon, and softened butter to create the cinnamon swirl mixture. Transfer to a piping bag or a zip-top bag with a small corner cut off.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it.
- Pour about 1/4 cup of batter onto the hot skillet for each pancake.
- Pipe a swirl of the cinnamon mixture onto the surface of each pancake batter.
- Cook until bubbles form on the surface, then gently flip the pancake.
- Cook the other side until golden brown.
- For the glaze, whisk together powdered sugar and 2 tablespoons of milk until smooth.
- Drizzle the glaze over the warm cinnamon roll pancakes before serving.
Notes
- Do not overmix the pancake batter. Lumps are okay.
- If the cinnamon swirl mixture becomes too thick, microwave it for a few seconds.
- Allow pancakes to cool for a minute before glazing for best results.
- For thicker pancakes, do not press down with the spatula after flipping.
- If you don’t have a piping bag, a zip-top bag with a corner snipped off works well.
