- 2 large yellow onions
- 1.5 pounds boneless skinless chicken thighs
- 1 cup orzo pasta
- 2 cloves garlic, minced
- 2 cups chicken or beef broth
- 1.5 cups shredded gruyère cheese
- 3 tablespoons butter
- 1 teaspoon fresh thyme
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Thinly slice the onions and cook them in butter over medium-low heat for 30 to 40 minutes until deeply golden and caramelized.
- Season chicken thighs with salt and pepper. Sear in a skillet until browned on both sides.
- In a large casserole dish, add the uncooked orzo, minced garlic, caramelized onions, and thyme. Pour in broth and mix.
- Nestle the seared chicken thighs into the orzo mixture.
- Cover with foil and bake at 375°F for 25 minutes.
- Remove foil, top with shredded gruyère, and bake uncovered for 10 more minutes until cheese is bubbly and golden.
- Let the casserole rest for 5 minutes before serving.
