- 1 lb chicken breast, cubed
- 2 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 ½ cups heavy cream
- ½ cup cream cheese
- 1 cup grated Parmesan cheese
- 1 tsp Cajun seasoning
- 1 ½ cups spinach, chopped
- 1 cup artichoke hearts, chopped and drained
- 8 oz pasta (penne or fettuccine), cooked al dente
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Heat olive oil in a skillet over medium-high heat. Add chicken, season with salt, pepper, and Cajun seasoning. Cook for 5–6 minutes until golden.
- Add garlic in the final minute of cooking and sauté until fragrant. Remove chicken and set aside.
- In the same skillet, reduce heat and add butter. Once melted, pour in heavy cream.
- Stir in cream cheese and whisk until smooth. Add Parmesan and Cajun seasoning. Simmer for 3–4 minutes.
- Fold in spinach and artichokes. Cook until wilted and well combined.
- Meanwhile, cook pasta according to package instructions. Drain.
- Add cooked pasta and chicken back into the sauce. Stir until well combined.
- Serve hot with extra Parmesan or red pepper flakes if desired.
