Description

A savory and moist zucchini quick bread packed with fresh zucchini, sharp cheddar cheese, and green onions. This easy recipe is perfect as a snack, breakfast treat, or a side dish.


Ingredients

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/3 cup vegetable oil
  • 1 1/2 cups grated zucchini (squeezed dry)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.
  3. In another bowl, beat the eggs, then mix in the milk and vegetable oil until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the grated zucchini, cheddar cheese, and chopped green onions.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

  • Blotting the shredded zucchini with a paper towel is recommended for best results.
