- 1 1/2 cups grated zucchini (squeezed dry)
- 1 cup shredded sharp cheddar cheese

Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.
- In another bowl, beat the eggs, then mix in the milk and vegetable oil until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the grated zucchini, cheddar cheese, and chopped green onions.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Blotting the shredded zucchini with a paper towel is recommended for best results.
- Do not overmix the batter to avoid a dense bread.
- Freshly grated cheese melts better than pre-shredded.
