This Grilled Chicken Panini Sandwich features juicy grilled chicken, fresh spinach, melty cheese, and crispy golden bread. It’s an easy lunch or dinner idea packed with flavor.

- 2 boneless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 slices ciabatta or sourdough bread
- 4 slices provolone or mozzarella cheese
- 1 cup fresh spinach or arugula
- 1 medium tomato, sliced
- 2 tablespoons mayonnaise or pesto
- 1 tablespoon butter
Instructions
- Slice the chicken breasts horizontally for even cooking and marinate them with olive oil, garlic powder, Italian seasoning, salt, and pepper for at least 20 minutes.
- Preheat a grill pan over medium-high heat. Grill the chicken for 4–5 minutes per side until fully cooked and charred. Let rest before slicing.
- Spread mayonnaise or pesto on one side of each bread slice.
- Layer the bread with cheese, grilled chicken, spinach, and tomato slices.
- Close the sandwich with the second slice of bread. Butter the outsides.
- Place the sandwich on a hot grill pan. Press with a heavy skillet or panini press.
- Grill each side for 3–4 minutes or until golden and the cheese has melted.
